Taco Bell Mexican Pizza Recipe

Ingredients:

For the Base:

  • 4 small flour tortillas (or 6-inch tortillas)
  • 1/2 pound ground beef (or ground turkey for a lighter option)
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • 1/2 cup refried beans (canned or homemade)
  • 1/2 cup enchilada sauce or tomato sauce
  • 1 cup shredded cheddar cheese (or a Mexican cheese blend)
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Oil for frying (optional, for crispy tortillas)

Optional Toppings:

  • Sliced black olives
  • Jalapeños
  • Sour cream
  • Guacamole

Instructions:

  1. Prepare the Tortillas:
    • Heat a skillet over medium heat and lightly fry the tortillas in a small amount of oil until crispy, about 1-2 minutes per side. Alternatively, you can bake them in the oven at 375°F (190°C) for 5-7 minutes until crispy. Set aside.
  2. Cook the Ground Beef:
    • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
    • Add the taco seasoning and a splash of water. Stir well and cook for another 2-3 minutes. Set aside.
  3. Assemble the Mexican Pizzas:
    • Spread a thin layer of refried beans on one crispy tortilla.
    • Add a layer of the seasoned ground beef on top of the beans.
    • Place a second tortilla on top to create a “sandwich.”
    • Spread a thin layer of enchilada sauce or tomato sauce over the top tortilla.
    • Sprinkle shredded cheese evenly over the sauce.
    • Add diced tomatoes and green onions on top of the cheese.
  4. Melt the Cheese:
    • Place the assembled Mexican pizzas on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly. Watch closely to avoid burning.
  5. Add Final Toppings:
    • Remove from the oven and add any optional toppings like black olives, jalapeños, or a dollop of sour cream.
  6. Serve:
    • Slice the Mexican pizzas into quarters and serve immediately while warm.

Tips:

  • For a vegetarian version, substitute the ground beef with seasoned black beans or plant-based ground meat.
  • Use corn tortillas for a gluten-free option, but note they may not get as crispy as flour tortillas.
  • Make it spicier by adding hot sauce or diced jalapeños to the beef mixture.

Enjoy your homemade Taco Bell Mexican Pizza! 🌮🍕
